Ingredients
- 2 slices white sandwich bread crusts removed, cut into 1/4-inch pieces
- 1/3 cup milk
- 2 1/2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 3 cloves garlic minced
- 1 1/2 tablespoons Worcestershire sauce
- 2 tablespoons ketchup
- 3 pounds ground beef 80-85% lean
- 3 scallions optional, finely sliced
- olive oil to taste, for oiling the grill grates
- 8 slices cheese optional, of your choice
- 8 hamburger buns for serving
- condiments optional, of your choice, to taste
Directions
- Preheat the grill to high heat.
- In a large bowl, mash the bread and the milk with a fork until it forms a chunky paste.
- Add the salt, the pepper, the garlic, the Worcestershire, and the ketchup to the bread mixture-milk mixture and mix well.
- Add the ground beef and the scallions to the bread mixture.
- Use your hands to break up the meat and evenly combine all the ingredients.
- Using your hands, divide the meat mixture into 8 equal portions and form compact balls.
- Flatten the balls into 3/4-inch-thick patties, about 4 1/2-inches across.
- Form a slight depression in the center of each patty to prevent the burgers from puffing up on the grill.
- Using the oil, grease the grill grates.
- Grill the burgers, covered, until nicely browned on the first side, about 2-4 minutes.
- Flip the burgers and evenly add the slices of the cheese. Continue cooking until the cheese is melted and the desired doneness is reached, 135 degrees for medium-rare.
- Toast the buns on the cooler side of the grill.
- Place the 8 burgers on the 8 buns and top with your favorite condiments.
- Serve.
