Ingredients

  • 1 pound center-cut pork chop boneless, thickly cut
  • 1 (8-ounce) block cream cheese softened
  • 1/2 cup parmesan shredded
  • 1 cup spinach chopped
  • 1/2 teaspoon thyme leaves
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil

Directions

  • Preheat the oven to 350 degrees F.
  • Use a sharp knife to gently cut a pocket lengthwise into each of the pork chops.
  • In a large bowl, add the cream cheese, the parmesan, the spinach, the thyme, and the oregano and stir to combine.
  • Evenly stuff the cream cheese mixture into the pockets of each of the pork chops, then use toothpicks to secure them.
  • Evenly season each of the pork chops with the salt and the pepper.
  • In a cast-iron skillet over medium-high heat, add the oil.
  • Evenly place the stuffed pork chops in the heated oil and cook, flipping them once, about 2 minutes per side.
  • Use an oven mitt to carefully transfer the cast-iron skillet to the oven and bake the stuffed pork chops until they reach an internal temperature of 145 degrees F, about 5-7 minutes.
  • Transfer the cooked pork chops to a plate and let them rest, about 5-10 minutes.
  • Serve.
