Ingredients
- 6 ounces boxed stuffing mix
- 1/2 cup butter melted
- 4 zucchinis diced into bite-sized pieces
- 3 chicken breasts boneless and skinless, cooked and diced
- 1/2 cup mozzarella cheese optional, shredded
- 1 (10.5-ounce) can cream of chicken soup
- 1/2 onion diced
- 1/2 cup sour cream
Directions
- Preheat the oven to 350 degrees F.
- Spray a 9x13-inch glass pan with nonstick cooking spray.
- In a large bowl, combine the stuffing mix and the melted butter.
- Reserve 1/2 cup of the stuffing mixture for the topping.
- Add the zucchini, the chicken, the mozzarella, the cream of chicken soup, the onion, and the sour cream to the remaining stuffing in the bowl.
- Spread the zucchini mixture in an even layer in the prepared pan.
- Sprinkle the reserved stuffing mix on top of the bake.
- Bake, uncovered, until cooked through and the top is golden-brown, about 40-50 minutes.
- Serve.
