Ingredients
- 1 cup olive oil
- 2/3 cup lemon juice
- 2 teaspoons garlic minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper plus more, to taste
- 1 medium onion diced
- 6 (6-8-ounce) chicken breasts boneless and skinless
Directions
- In a bowl, add the olive oil, the lemon juice, the garlic, the salt, and 1/2 teaspoon of the black pepper and whisk to combine.
- Add the diced onions to the olive oil mixture and whisk to combine.
- In a gallon-size, resealable plastic bag, add the chicken breasts and the olive oil mixture.
- Seal the bag and massage lightly to ensure the chicken breasts are evenly coated.
- Allow the chicken to marinate for at least 8 hours and up to overnight.
- Preheat the grill to medium heat.
- Add the marinated chicken breasts to the hot grill and sprinkle them with the extra black pepper.
- Cook the chicken breasts, flipping them once, until they reach an internal temperature of 165 degrees F, about 10-15 minutes.
- Serve.
