Ingredients
- 6 ounces brown rice noodles such as Thai Kitchen® brown rice noodles
- 3 tablespoons canola oil
- 2 cups scallions sliced
- 8 ounces medium shrimp peeled and deveined
- 1 large egg
- 1/3 cup unsalted peanuts chopped, divided
- 3 tablespoons no-salt-added ketchup
- 2 tablespoons fresh lime juice
- 1 1/2 tablespoons sriracha sauce
- 1 tablespoon fish sauce
- 1 tablespoon water
- 2 tablespoons fresh cilantro chopped, for garnish
Directions
- In a large pot of salted, boiling water, cook the noodles to al dente, according to the package directions. Drain the noodles.
- In a large cast-iron skillet over high heat, add the oil.
- Add the scallions and the shrimp to the heated oil and cook, stirring often, until the scallions are bright green, about 1-2 minutes.
- Add the egg to the shrimp mixture and cook, stirring constantly, until the shrimp reaches an internal temperature of 145 degrees F and the egg is cooked, about 1 minute.
- Add the cooked noodles, 1/2 of the peanuts, the ketchup, the lime juice, the sriracha sauce, the fish sauce, and the water to the shrimp mixture and toss well to combine.
- Serve the shrimp mixture topped with the remaining peanuts and the cilantro.
