Ingredients
- 2 tablespoons olive oil
- 2 medium sweet potatoes washed, peeled, and chopped into 1-inch cubes
- 1 red bell pepper thinly sliced
- 1 green bell pepper thinly sliced
- 1/2 small yellow onion thinly sliced
- 1-2 cups carnitas
- 1/2 teaspoon kosher salt
- 2 eggs fried
- 1 avocado optional, thinly sliced
- cilantro optional, for serving
Directions
- Heat the olive oil in a 10-inch skillet over medium-high heat.
- Fry the potatoes until lightly brown, stirring occasionally, for about 15 minutes.
- Add the red bell pepper, green bell pepper, and onion and cook until all the vegetables are tender, for about 10 minutes.
- Add the carnitas and cook until warmed through.
- Season with salt.
- Top with the fried eggs, avocado, and cilantro.
- Serve.
