Ingredients
- olive oil to taste
- 3 chicken breasts boneless and skinless, sliced
- 1/2 red onion sliced
- 1/2 red bell pepper sliced
- 1/2 green bell pepper sliced
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic minced
- 1 teaspoon salt plus more, to taste
- 1/2 teaspoon black pepper plus more, to taste
- 2 cups chicken broth
- 1 (16-ounce) package angel hair pasta
- 1 cup parmesan cheese grated or shredded
Directions
- In a skillet over medium-high heat, add the olive oil.
- Add the chicken breast slices to the hot oil and cook, stirring occasionally, until they begin to brown, about 2-4 minutes.
- Add the onions, the red bell peppers, and the green bell peppers to the hot oil and cook, while tossing, until they begin to soften, about 2-3 minutes.
- Add the Italian seasoning, the garlic, 1 teaspoon of the salt, and 1/2 teaspoon of the black pepper to the chicken mixture and stir to combine.
- Add the chicken broth to the chicken mixture and stir to combine.
- Bring the chicken mixture to a boil.
- Cover the skillet and reduce the heat to low.
- Let the chicken mixture simmer until reduced and the chicken slices reach an internal temperature of 165 degrees F, about 3-5 minutes.
- In a large pot of salted, boiling water, add the angel hair pasta and cook it to al dente, according to the package directions.
- Drain the pasta.
- Add the parmesan to the chicken mixture and stir to combine.
- Taste the chicken mixture for seasoning and add the extra salt and the extra black pepper, as needed.
- Serve the pasta topped with the chicken mixture.
