Ingredients

  • 2 tablespoons oil
  • 1 1/2 pounds ground beef
  • 4-5 cloves garlic finely chopped
  • 3 small bell peppers color of your choice, diced
  • 3 tablespoons taco seasoning
  • 1 cup rice uncooked
  • 1 1/2 cups corn
  • 1 (15-ounce) jar salsa
  • 1 (15-ounce) can black beans drained
  • 4 cups cheddar cheese shredded, divided
  • 1 1/2 cups beef broth

Directions

  • Preheat the oven to 375 degrees F.
  • Heat the oil in an oven-safe skillet over medium-high heat.
  • Add the ground beef and cook, while crumbling, until browned, about 5-7 minutes.
  • Add the garlic and the bell peppers and cook until softened, about 5 minutes.
  • Stir in the taco seasoning and cook until fragrant, about 2 minutes.
  • Add the rice, the corn, the salsa, the black beans, 1 cup of the cheddar, and the beef broth, mixing until well-combined.
  • Top the mixture with the remaining cheese.
  • Cover the skillet and bake until the rice is cooked, about 25-30 minutes.
  • Uncover and cook until the cheese is melted, about 2-3 minutes.
  • Serve.
