Ingredients
- 1 (8-16-ounce) T-Bone steak can substitute with ribeye or New York Strip
- salt to taste
- garlic powder optional, to taste
- pepper to taste
- 1 tablespoon bacon grease
- 2 tablespoons butter
Directions
- Place the steak on a plate, platter, or sheet pan.
- Season the steak liberally with the salt, the pepper, and the garlic powder on all sides, firmly pressing the seasonings into the meat.
- Let the steak come up to room temperature, about 30-45 minutes.
- Place a skillet over medium heat.
- Add the bacon grease to the hot pan to melt.
- Add the steak to the skillet and cook until lightly browned on one side, about 3-4 minutes.
- Add the butter to the skillet and let it melt.
- Flip the steak.
- Baste the steak with the melted butter.
- Cook the steak until it reaches your desired level of doneness, about 135 degrees F internally for medium rare and 10 degrees F more for medium, about 3-4 minutes.
- Place the steak on its side and sear the fat, about 1-2 minutes.
- Transfer the steak to a plate, cover, and let rest, about 5-10 minutes.
- Serve.
