Ingredients
- 4 bacon strips finely chopped
- 1 1/2 pounds turkey breast tenderloins cut into 1-inch pieces
- 4 medium carrots sliced
- 2 small onions quartered
- 2 celery ribs sliced
- 1 bay leaf
- 1/4 teaspoon dried rosemary crushed
- 2 cups water divided
- 1 (14.5-ounce) can reduced-sodium chicken broth
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup reduced-fat biscuit/baking mix
- 1/3 cup plus 1 tablespoon fat-free milk
- parsley optional, to taste, chopped, for garnish
Directions
- In a Dutch oven over medium heat, add the bacon and cook, stirring occasionally, until crisp, about 5-8 minutes.
- Transfer the bacon with a slotted spoon to paper towels to drain.
- Reserve 2 teaspoons of the drippings in the pot, discarding the rest.
- In the drippings over medium-high heat, add the turkey and cook, breaking it up with a wooden spoon, until it is no longer pink, about 5-7 minutes.
- Add the carrots, the onions, the celery, the bay leaf, the rosemary, 1 3/4 cups of the water, and the broth and bring the mixture to a boil.
- Reduce the heat to low and simmer the mixture, covered, until the vegetables are tender, about 20-30 minutes.
- In a small bowl, add the flour and the remaining water and mix until smooth.
- Stir the flour mixture into the turkey mixture.
- Bring the stew mixture to a boil and cook, while stirring, until thickened, about 2 minutes.
- Remove and discard the bay leaf.
- Stir in the salt, the pepper, and the bacon.
- In a small bowl, add the biscuit mix and the milk and mix until a soft dough forms.
- Drop 6 mounds of the dough on top of the simmering stew.
- Cover the pot and simmer until a toothpick inserted into the dumplings comes out clean, about 15 minutes.
- Serve garnished with the parsley.
