Ingredients
- 8 strips bacon cut into 1-inch pieces
- 1 cup onion finely chopped
- 2/3 cup celery finely chopped
- 1/2 cup green pepper finely chopped
- 2 cloves garlic minced
- 2 teaspoons all-purpose flour
- 2 teaspoons sugar
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 2 (14.5-ounce) cans diced tomatoes undrained
- 8 cups frozen lima beans thawed
Directions
- Preheat the oven to 325 degrees F.
- Grease a 3-quart baking dish or a 9x13-inch baking pan.
- In a large stockpot over medium heat, cook the bacon, the onion, the celery, and the green pepper until the bacon is crisp and the vegetables are tender, about 7-8 minutes.
- Add the garlic and cook until fragrant, about 1 minute.
- Stir in the flour, the sugar, the salt, and the pepper.
- Stir in the tomatoes and their juices and bring the mixture to a boil while stirring constantly.
- Cook until thickened, about 1-2 minutes.
- Stir in the beans.
- Transfer the mixture to the prepared baking dish.
- Cover and bake until the beans are tender, about 35-40 minutes.
- Serve.
