Ingredients
- 2 teaspoons vegetable oil divided
- 4 eggs beaten
- 1 cup bean sprouts
- 1/2 cup chicken cooked and diced
- 1/3 cup green onions thinly sliced
- 1/2 teaspoon garlic powder
- salt to taste
- pepper to taste
- 8 slices white bread divided
- 8 leaves iceberg lettuce divided
- 2 tomatoes thinly sliced and divided
- 1/4 cup dill pickle chips divided
- 1/4 cup mayonnaise divided
Directions
- In a small pan, heat 1/2 teaspoon of the vegetable oil over medium heat.
- In a medium bowl, mix the eggs, the sprouts, the chicken, the green onions, the garlic powder, the salt, and the pepper until combined.
- Sauté 1/2 cup of the egg mixture in the hot oil, flipping once, until golden brown on both sides, about 2-3 minutes per side.
- Repeat the sautéing process with the remaining oil and the remaining egg mixture until you have 4 egg patties.
- Add the egg patties to 4 slices of the bread.
- Top each egg patty with an even amount of the lettuce, the tomatoes, the pickle chips, and the mayonnaise.
- Top the sandwiches with the remaining bread and serve.
