Ingredients
- 1 bunch asparagus trimmed
- 3 large carrots sliced into long, thin stalks similar to the size of the asparagus
- 1 tablespoon olive oil
- salt to taste
- freshly ground black pepper to taste
- 1/2 cup goat cheese crumbles
- 2 teaspoons lemon zest
Directions
- Preheat the oven to 400 degrees F.
- Line a baking sheet with parchment paper.
- Arrange the asparagus stalks and the carrot stalks in an even layer on the prepared baking sheet.
- Drizzle the vegetable mixture with the olive oil and toss until lightly coated.
- Season the vegetable mixture with the salt and the pepper.
- Roast the vegetable mixture until it is tender and slightly browned, about 20-25 minutes.
