But then 'Tis the Season Pork Tenderloin decides to bring out the festive flavors with a cranberry chipotle sauce that mixes heat with just the right amount of spice to warm you right up when the weather gets cold. Ingredients

1 teaspoon garlic salt
1/2 teaspoon ground dry mustard
1 pound pork tenderloin
2 tablespoons olive oil
3 tablespoons honey
1 can chipotle pepper in adobo sauce finely minced
1 cup whole cranberries coarsely chopped
1 small clove garlic minced
2 teaspoons fresh lemon juice
1/2 cup brown sugar or to taste

Directions

Preheat the oven to 375 degrees F.
Mix the garlic salt and the dry mustard in a small bowl.
Rub the spice mixture over the pork.
Line a roasting pan with foil and coat a rack with cooking spray.
Place the pork on the prepared rack and place the rack on the prepared roasting pan.
Roast the pork in the oven for 30 minutes.
Mix the olive oil and the honey in a small bowl.
Brush the oil and honey mixture over the pork and cook until the internal temperature of the pork reaches 160 degrees F, about 10 minutes.
Combine the chipotle peppers, the cranberries, the minced garlic, the lemon juice, and the brown sugar in a small heavy-bottomed pot.
Bring the mixture to a boil over medium-high heat, stirring constantly.
Reduce the heat to low and cook, stirring occasionally, until thickened, about 10-15 minutes.
Slice the pork and serve with the pan juice and the cranberry chipotle sauce.
