Ingredients
- 3 tablespoons olive oil
- 1 small clove garlic minced
- 1 (10.75 ounce) can condensed tomato soup
- 1/4 cup bottled marinara sauce
- 1/2 (10.75 ounces) can water
- 1 teaspoon fresh oregano or to taste, chopped
- 1/2 teaspoon ground black pepper
- 1 tablespoon fresh basil plus more to taste, chopped
- 6 Italian-style seasoned croutons plus more to taste
- 2 tablespoons parmesan cheese grated
Directions
- Heat the olive oil in a large saucepan over medium heat.
- Saute the garlic in the hot oil until tender and fragrant, 2-3 minutes. Stir.
- Stir the condensed tomato soup and marinara sauce into the garlic.
- Slowly add in the water, using the empty can of condensed tomato soup.
- Mix the oregano and black pepper into the soup.
- Bring the soup to a simmer, then reduce the heat to low.
- Cook until the flavors blend, about 15 minutes.
- Stir the basil into the soup.
- Ladle the soup into bowls and top with the croutons and parmesan cheese.
- Serve.
