Ingredients

  • 2 cups flour
  • 3 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups milk
  • 2 eggs
  • 1 tablespoon butter plus more, to taste
  • 2 cups trail mix of your choice

Directions

  • In a medium mixing bowl, whisk together the flour, the sugar, the baking powder, and the salt.
  • Add the milk and the eggs to the dry ingredients, whisking to incorporate but being careful not to overmix. The batter should be lumpy.
  • Heat a large skillet on the stovetop over medium heat.
  • Melt 1 tablespoon of the butter in the skillet until foamy.
  • Pour 1/3 cup of the batter onto the skillet for each pancake.
  • Sprinkle each of the pancakes with 1-2 tablespoons of the trail mix.
  • Cook until the surface of the pancakes has bubbles, about 1-2 minutes.
  • Flip the pancakes until all sides are golden-brown, about 1-2 minutes.
  • Repeat with the remaining batter until all of the pancakes are made, ensuring to use the extra butter before each batch.
  • Serve hot!
