Ingredients
- 1 1/4 cups quick-cooking oats divided
- 1 medium onion chopped
- 1/2 cup carrot shredded
- 1/2 cup fat-free milk
- 1/4 cup egg substitute
- 1/4 cup plus 2 tablespoons ketchup divided
- 1 teaspoon garlic powder
- 1/4 teaspoon pepper
- 2 pounds lean ground turkey
Directions
- Preheat the oven to 350 degrees F.
- Combine the 1 cup of quick-cooking oats, the onion, the shredded carrot, the fat-free milk, the egg substitute, the 2 tablespoons of ketchup, the garlic powder, the pepper, and the turkey and mix lightly but thoroughly.
- Transfer the meat loaf to a 9x5-inch loaf pan coated with cooking spray.
- Mix the 1/4 cup ketchup and the 1/4 cup quick-cooking oats, and spread the topping over the loaf.
- Bake until a thermometer reads 165 degrees F, about 60-65 minutes.
- Let stand for 10 minutes, then slice.
- Serve.
