Ingredients
- 1 pound Yukon Gold potatoes unpeeled, cut into 1-inch pieces
- 2 tablespoons olive oil
- 2 tablespoons Creole-style seasoning divided
- 2 pounds chicken breasts boneless, skinless, and cut into 1-inch cubes
- 1/2 cup plain whole-milk strained yogurt such as Greek
- 1 teaspoon kosher salt
- 1 red bell pepper seeded and coarsely chopped
- 1 small yellow onion coarsely chopped
- 4 ounces sharp cheddar cheese shredded, about 1 cup
- 3 slices bacon cooked and crumbled
- 3 scallions thinly sliced
- sour cream to taste, for serving
- hot sauce to taste, for serving
Directions
- Preheat the oven to 425 degrees F with racks in the middle and upper positions.
- Toss together the potatoes, the olive oil, and 1 tablespoon of the Creole seasoning in a 9x13-inch baking dish.
- Bake the potato mixture on the middle rack, making sure to stir the potatoes halfway through cooking, until the potatoes are tender and easily pierced with a knife, about 30-35 minutes.
- While the potatoes cook, mix the chicken, the yogurt, the salt, and the remaining Creole seasoning in a large bowl, stirring to combine.
- Chill the chicken mixture while the potatoes cook.
- Once the potatoes are fully cooked, transfer the baking dish from the oven.
- Add the chicken mixture, the bell pepper, and the onion to the baking dish with the potatoes and toss to combine.
- Return the baking dish to the oven's middle rack and bake until the chicken is cooked through at 165 degrees F in the thickest part, about 30-35 minutes.
- Transfer the baking dish from the oven and switch the oven to broil.
- Top the potato and chicken mixture evenly with the cheese, the cooked bacon, and the scallions.
- Return the baking dish to the oven on the top rack and broil until the cheese is melted and bubbly, about 2 minutes.
- Add the sour cream and the hot sauce and serve.
