Ingredients
- 6 ounces bacon cut into 1-inch pieces
- 1 yellow onion diced
- 2 cups chicken broth
- 8 ounces wide egg noodles
- 1/4 pound fresh spinach
- 1/3 cup parmesan cheese grated
Directions
- In a large skillet over medium-high heat, add the bacon pieces and cook, while stirring, until they are browned and crispy, about 5-8 minutes.
- Using a slotted spoon, transfer the bacon to a bowl.
- Reserve 1 tablespoon of the bacon drippings in the skillet, draining the remainder.
- Add the diced onions to the hot bacon drippings in the skillet and cook, while stirring, until they are soft and transparent, about 3-4 minutes.
- Add the chicken broth to the skillet and stir, while scraping the bottom of the pan to release the browned bits.
- Add the egg noodles to the broth mixture and cover the skillet with a lid.
- Allow the noodle mixture to come to a boil over high heat.
- Quickly stir the noodle mixture and reduce the heat to low.
- Allow the noodle mixture to simmer, covered and while stirring occasionally, until the noodles are al dente and the broth is mostly absorbed, about 10 minutes.
- Add the spinach to the noodle mixture and stir until it is wilted.
- Turn off the stovetop heat.
- Add the cooked bacon pieces and the parmesan cheese to the noodle mixture and stir to combine.
- Serve.
