Ingredients

  • 8 slices bacon
  • 5 tablespoons maple syrup
  • 3 tablespoons soy sauce
  • 1 teaspoon chili powder
  • salt to taste
  • black pepper to taste
  • 16 extra-large shrimp peeled and deveined, tails optionally removed
  • 1 tablespoon parsley optional, chopped, for garnish

Directions

  • Preheat the oven to 400 degrees F.
  • Line a sheet pan with foil.
  • Spray the foil-lined sheet pan with cooking spray.
  • Lay the bacon slices out in a single layer on the prepared sheet pan.
  • Bake until the bacon is partially cooked, about 8-10 minutes.
  • Allow the bacon to cool for 5 minutes.
  • Cut each slice of the bacon in half crosswise.
  • In a medium bowl, add the maple syrup, the soy sauce, the chili powder, the salt, and the black pepper and whisk to combine into a marinade.
  • Reserve 2 tablespoons of the marinade.
  • Add the shrimp to the bowl with the remaining marinade and toss lightly to coat.
  • Cover the bowl and chill the shrimp in the marinade for at least 10 minutes and up to 8 hours.
  • Preheat the oven to the broil setting on high.
  • Coat a clean sheet pan with cooking spray.
  • Wrap 1 piece of the bacon around each of the shrimp, securing each bacon piece with a toothpick.
  • Place the bacon-wrapped shrimp on the prepared sheet pan and broil until the shrimp reaches an internal temperature of 145 degrees F and the bacon is crispy, about 3-5 minutes.
  • Flip the bacon-wrapped shrimp and broil them until evenly browned on all sides, about 1-2 minutes.
  • Transfer the shrimp from the oven.
  • Brush the bacon-wrapped shrimp with the reserved marinade.
  • Serve the bacon-wrapped shrimp sprinkled with the parsley.
