Ingredients

  • 2 teaspoons olive oil
  • 1 (8-ounce) carton mushrooms sliced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 3 cups dairy-free sour cream
  • browning sauce optional, to taste
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 (12-ounce) packages frozen cut green beans thawed
  • 4 cups dairy-free cheddar-flavored cheese shredded
  • 1/4 cup dairy-free buttery spread melted
  • 1 cup butter crackers crushed
  • 1 cup crispy fried onions coarsely chopped

Directions

  • Preheat the oven to 350 degrees F.
  • Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium heat and add the oil to the skillet.
  • Add the mushrooms and the onions to the skillet and sauté until they are tender.
  • Add the garlic to the skillet and cook, stirring frequently, until it is fragrant, about 1 minute.
  • Add the sour cream, the browning sauce, the salt, and the pepper to the vegetable mixture and stir to combine.
  • Add the green beans and the cheese to the vegetable mixture and stir to coat.
  • Transfer the vegetable cheese mixture to the prepared baking dish.
  • In a small bowl, combine the buttery spread, the butter crackers, and the fried onions, and then sprinkle the cracker mixture on top of the casserole.
  • Bake the casserole until it is bubbly and the top is golden-brown, about 25-30 minutes.
