Ingredients
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons dry sherry
- 2 teaspoons sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon freshly ground black pepper
- 10 ounces chow mein noodles
- 4 cups boiling water
- 2 tablespoons extra-virgin olive oil
- 1/2 small onion thinly sliced
- 1 carrot peeled and julienned
- 1 (8-ounce) package snow peas thinly sliced on the bias
- 6 canned baby corn drained and cut in half
- 1 cup savoy cabbage shredded
- toasted sesame seeds optional, to taste, for garnish
Directions
- In a mixing bowl, add the soy sauce, the oyster sauce, the sherry, the sugar, the sesame oil, and the black pepper and whisk to combine. Set the sauce mixture aside.
- In a large, shallow baking dish, add the noodles and the boiling water and let the noodles sit for 10 minutes.
- Drain the noodles and set them aside.
- In a large skillet over a wok over high heat, add the olive oil.
- Add the onions and the carrots to the hot oil and cook, while stirring, until they are just starting to soften, about 2 minutes.
- Add the snow peas and the baby corn and cook, about 2 minutes.
- Add the cabbage and cook until it starts to soften, about 1 minute.
- Add the noodles and the sauce mixture to the vegetable mixture and toss until combined.
- Cook until the vegetables have blistered slightly and the sauce coats the noodle mixture, about 2-3 minutes.
- Serve garnished with the sesame seeds.
