Ingredients

  • 2 (3-ounce) packages instant ramen spice packet discarded or reserved for a separate use
  • 2 tablespoons unsalted butter
  • 1/2 medium red bell pepper chopped
  • 1 small carrot peeled and thinly sliced into rounds
  • 2 cloves garlic minced
  • red pepper flakes to taste
  • 3 tablespoons low-sodium soy sauce
  • 3 tablespoons light brown sugar
  • 3 large eggs lightly beaten
  • salt to taste
  • black pepper to taste
  • 1 tablespoon everything bagel seasoning for serving
  • scallions optional, to taste, chopped, for serving

Directions

  • In a medium pot of boiling water, cook the ramen noodles according to the package instructions.
  • Drain the noodles and set them aside.
  • In a large, nonstick skillet over medium-high heat, melt the butter.
  • Add the bell peppers and the carrots and cook, while stirring often, until softened, about 4 minutes.
  • Add the garlic and the red pepper flakes and cook, while stirring, until fragrant and golden, about 1 minute.
  • Add the soy sauce and the brown sugar and cook, while stirring, until the sugar is dissolved and the sauce is boiling, about 15 minutes.
  • Add the noodles and toss to coat.
  • Push the noodles to one side of the skillet and add the eggs to the other side.
  • Season the eggs with the salt and the pepper.
  • Let the eggs sit until the very edges look like they are set, about 20 seconds.
  • Stir the eggs and cook, while stirring occasionally, until large, soft curds form, about 3 minutes.
  • Combine the noodles and the eggs.
  • Top the noodle mixture with the everything bagel seasoning and the scallions.
  • Serve.
