It's so comforting and hearty, with its balance of creamy and sweet-and-savory flavors, the vibrant richness of the tomato sauce, and the melty mozzarella on top... everyone is getting excited for it already! Ingredients

1/4 cup extra virgin olive oil
3 large cloves garlic thinly sliced
5 San Marzano tomatoes peeled
2 handfuls fresh spinach
2 (15-ounce) cans cannellini white beans rinsed
1 tablespoon water
1/2 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
kosher salt to taste
black pepper to taste
2 cups mozzarella shredded
tortilla chips to taste, for serving

Directions

Preheat the oven to 475 degrees F.
Heat the olive oil in a 10-inch ovenproof skillet over medium-high heat.
Add the garlic to the skillet and cook until lightly golden, about 1 minute.
Add the tomatoes to the garlic and mash them with a potato masher or the back of a wooden spoon.
Cook the tomato mixture for 1 minute.
Add the spinach, the cannellini beans, the water, the Italian seasoning, the crushed red pepper flakes, the salt, and the pepper to the tomato mixture and stir to combine.
Sprinkle the mozzarella cheese evenly over the top of the bean mixture.
Bake the bean mixture until the cheese has melted and starts to brown in spots, about 8-10 minutes.
Serve with the tortilla chips.
