Ingredients
- 1 (10-ounce) bag baby spinach roughly chopped
- 1 (13-ounce) can artichoke hearts drained, quartered and chopped
- 1 (8-ounce) package cream cheese low-fat, cut into 1-inch cubes
- 1 cup light sour cream or plain Greek yogurt
- 1 cup mozzarella cheese shredded
- 1/2 cup parmesan cheese grated
- 1/3 cup white or red onion finely chopped
- 4 cloves garlic minced
- 1/2 teaspoon black pepper plus more, to taste
- 1/4 teaspoon fine sea salt plus more, to taste
- dippers such as chips or vegetables, to taste, for serving
Directions
- In a medium slow cooker on the low setting, add the spinach, the artichoke hearts, the cream cheese cubes, the sour cream, the mozzarella cheese, the parmesan cheese, the onion, the garlic, 1/2 teaspoon of the black pepper, and 1/4 teaspoon of the salt and stir to combine.
- Cover the spinach mixture and cook until the cheese is completely melted, about 2-3 hours on low or about 1 hour on high.
- Stir the dip until evenly combined and season it with the extra black pepper and the extra salt as needed.
- Serve warm with the dippers of your choice.
