Ingredients

  • 2 tablespoons butter
  • 1 yellow onion diced
  • 1 chicken breast boneless and skinless, diced into 1/2-inch pieces
  • 1 cup long-grain white rice
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried sage
  • 1/4 teaspoon salt plus more, to taste
  • freshly cracked black pepper to taste
  • 3 cups chicken broth
  • 2 cups frozen peas and carrots mix
  • 1/3 cup heavy cream
  • 4 ounces cheddar cheese shredded

Directions

  • In a deep, oven-safe skillet over medium heat, melt the butter.
  • Add the onions to the melted butter and cook, while stirring, until softened and translucent, about 5 minutes.
  • Add the chicken pieces to the onions and cook, while stirring, until the chicken pieces are browned but not quite cooked through, about 3 minutes.
  • Add the rice, the thyme, the sage, 1/4 teaspoon of the salt, the black pepper, and the chicken broth to the chicken mixture and stir to combine.
  • Cover the skillet with a lid and increase the heat to medium-high.
  • Bring the chicken mixture to a boil and then reduce the heat to low.
  • Allow the chicken mixture to simmer, while stirring occasionally and keeping the skillet covered whenever not stirring, until the rice is tender and has absorbed most of the liquid but is still saucy, about 15-20 minutes.
  • Add the frozen peas and carrots to the chicken mixture and stir to combine.
  • Replace the lid on the skillet and allow the chicken mixture to sit until the vegetable mixture is heated through, about 5 minutes.
  • Add the heavy cream to the chicken mixture and stir to combine.
  • Taste the chicken mixture and add the extra salt, as needed.
  • Preheat the oven to the broiler setting.
  • Top the chicken mixture with the cheddar cheese.
  • Broil the chicken mixture, uncovered, until the cheese is melted, about 2-3 minutes.
  • Serve hot.
