Ingredients
- 12 ounces egg noodles uncooked
- 2 teaspoons olive oil
- 1 1/4 pounds lean ground beef
- 1 onion finely chopped
- 2 teaspoons garlic minced
- salt to taste
- pepper to taste
- 1 (16-ounce) can tomato sauce
- 1 (15-ounce) can diced tomatoes drained
- 2 teaspoons Italian seasoning
- 2 cups cheddar cheese shredded
- 2 tablespoons parsley chopped
Directions
- Preheat the oven to 400 degrees F.
- Coat a 9x13-inch baking dish with cooking spray.
- Bring a pot of salted water to a boil and cook the noodles to al dente according to the package directions. Drain.
- While the noodles are cooking, in a large pan over medium-high heat, warm the oil.
- Add the ground beef to the oil and cook, while crumbling, about 4-5 minutes.
- Add the onion and the garlic to the beef mixture and cook until the onion is softened and the meat is no longer pink, about 5 minutes.
- Season the meat mixture with the salt and the pepper.
- Add the tomato sauce, the tomatoes, and the Italian seasoning to the meat mixture and stir to combine.
- Add the cooked noodles to the beef mixture and toss to combine.
- Pour the beef and noodle mixture into the prepared baking dish.
- Sprinkle the casserole with the cheese.
- Bake until the cheese is melted, about 10-15 minutes.
- Sprinkle with the parsley and serve.
