Ingredients
- 1 1/2 cups chicken or turkey shredded
- 1/2 cup celery apple, fennel, or radish, chopped
- 1/4 small red onion chopped
- 1/2 cup mayonnaise
- kosher salt to taste
- freshly ground black pepper to taste
- 8 slices bread of your choice
Directions
- In a large bowl, place the chicken, the celery, the onion, the mayonnaise, the salt, and the pepper, stirring to combine.
- Lay 4 slices of the bread on a work surface and spread each evenly with the chicken salad.
- Top the sandwiches with the remaining slices of the bread.
- Serve.
