Ingredients
- 1 1/4 pounds ground beef or turkey
- 1 (4-ounce) can diced green chiles
- 1 (10-ounce) can tomatoes
- 1/2 cup creamed corn
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 tablespoon dried cilantro plus more, to taste
- salt to taste
- pepper to taste
- 2 (6-ounce) packages Mexican-style cornbread mix plus the ingredients called for on the package
- 1 cup cheddar cheese shredded
- salsa to taste, store-bought or homemade, for serving
- guacamole to taste, store-bought or homemade, for serving
Directions
- Preheat the oven to 400 degrees F.
- Coat a 13x9-inch pan with nonstick spray.
- In a large skillet, add the beef and cook, while crumbling, until it is no longer pink. Drain the excess grease.
- Stir the green chiles and their juices, the tomatoes and their juices, the creamed corn, the chili powder, the cumin, 1 tablespoon of the dried cilantro, the salt, and the pepper into the cooked beef and simmer until it has thickened and the flavors have combined.
- Prepare the cornbread mixes according to the package directions.
- Pour 1/2 of the prepared cornbread mix into the prepared pan and evenly top with the beef mixture.
- Sprinkle the cheese in an even layer over the beef mixture and top with the remaining cornbread mix. Lightly sprinkle the extra dried cilantro over top.
- Bake the tamale bake until the top is golden-brown, about 25 minutes.
- Serve the tamale bake with the salsa and the guacamole.
