Ingredients
- 6 large potatoes peeled, cut into cubes
- 4 tablespoons olive oil
- salt to taste
- pepper to taste
- 5 cloves garlic minced
- 1/4 cup parmesan cheese grated
- 1/4 cup parsley chopped
Directions
- Preheat the oven to 425 degrees F.
- Line a baking sheet with parchment paper.
- Arrange the potatoes on the baking sheet.
- In a small mixing bowl, combine the olive oil, the salt, the pepper, and the garlic.
- Pour the olive oil mixture over the potatoes and toss until the potatoes are evenly coated.
- Bake the potatoes for 30-35 minutes, turning on the broiler at the end to achieve a golden-brown crisp.
- Combine the parmesan cheese and the parsley in a mixing bowl.
- Pour the cheese mixture over the potatoes and toss until the cheese is slightly melted.
- Serve.
