Ingredients
- 1 pound sliced bacon diced
- 1 medium sweet onion chopped
- 6 large eggs lightly beaten
- 4 cups frozen shredded hash brown potatoes thawed
- 2 cups cheddar cheese shredded
- 1 1/2 cups 4% cottage cheese
- 1 1/4 cups Swiss cheese shredded
- green onions optional, to taste, sliced, for garnish
Directions
- Preheat the oven to 350 degrees F.
- Grease a 9x13-inch baking dish.
- In a large skillet over medium heat, cook the bacon and the onion until the bacon is crisp, about 5-8 minutes.
- Drain the fat from the skillet.
- In a large bowl, combine the eggs, the hash browns, the cheddar cheese, the cottage cheese, and the Swiss cheese.
- Stir the cooked bacon mixture into the egg mixture.
- Transfer the mixture to the prepared baking dish.
