Ingredients

  • 1/2 cup baby spinach
  • 1 (1-ounce) round BoursinĀ® cheese flavor of your choice, divided
  • 2 chives finely chopped, divided
  • 2 large eggs
  • 1 tablespoon milk
  • kosher salt to taste
  • black pepper to taste
  • 2 slices bacon cooked and crumbled

Directions

  • In a 10-ounce jar with a lid, add the spinach, 1/2 of the cheese, and 1/2 of the chives.
  • Tightly screw on the jar's lid and let the cheese mixture chill in the refrigerator for at least 8 hours and up to overnight.
  • Add the eggs, the milk, the salt, and the pepper to the cheese mixture in the jar.
  • Tightly screw on the jar's lid and vigorously shake the egg mixture until it is well-combined, about 20 seconds.
  • Unscrew the jar's lid and microwave the egg mixture, about 1 minute.
  • Continue microwaving the egg mixture in 15-second intervals until it is just set.
  • Evenly sprinkle the egg mixture with the bacon crumbles, the remaining cheese, and the remaining chives.
  • Serve.
