Ingredients

  • 4 chicken strips skinless and boneless
  • 1 (10.5-ounce) can chicken gravy
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 cup evaporated milk
  • 1 cup sage and onion stuffing mix
  • 1/2 cup onion minced
  • 2 teaspoons garlic minced
  • 1/4 teaspoon celery seed
  • black pepper to taste
  • 1 (32-ounce) package frozen bite-sized potato nuggets
  • 1/2 cup mozzarella cheese shredded
  • 1/2 cup cheddar cheese shredded
  • fresh parsley optional, to taste, roughly chopped, for garnish

Directions

  • Preheat the oven to 375 degrees F.
  • Spray a 9x13-inch baking pan with olive oil cooking spray.
  • Heat a large skillet over medium heat.
  • Spray the skillet lightly with olive oil cooking spray.
  • Add the chicken strips and cook until they are no longer pink in the center and the juices run clear, reaching 165 degrees F internally about 4 minutes per side.
  • Cut the chicken into cubes.
  • Transfer the cubed chicken to a large bowl.
  • Add the gravy, the cream of chicken soup, the evaporated milk, the stuffing mix, the onion, the garlic, the celery seed, and the black pepper and mix until combined.
  • Spread the frozen potato nuggets in the bottom of the prepared pan.
  • Pour the chicken mixture evenly on top of the nuggets.
  • Sprinkle the mozzarella cheese and the cheddar cheese on top of the chicken mixture.
  • Bake until golden and bubbly, about 45 minutes.
  • Garnish with the fresh parsley and serve.
