Ingredients

For the potatoes:

  • 1 pound baby gold or red potatoes cut in half
  • 1 tablespoon olive oil plus more to taste
  • salt to taste
  • pepper to taste
  • 2 teaspoons garlic powder

For the pork chops:

  • 4 pork chops thick-cut and boneless
  • pepper to taste
  • salt to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian herb seasoning blend
  • 1/2 teaspoon smoked paprika
  • 2 teaspoons dry ranch seasoning

For the broccoli:

  • 3 cups broccoli florets
  • 2 tablespoons olive oil
  • salt to taste
  • pepper to taste

For serving:

  • 1/3 cup parmesan cheese grated

Directions

  • Preheat the oven to 425 degrees F.
  • Grease a baking sheet.
  • Toss the potatoes with the 1 tablespoon of the olive oil, the salt, the pepper, and 2 teaspoons of the garlic powder.
  • Arrange the potatoes on 1/3 of the baking sheet, making sure to brush the sheet pan with a little olive oil.
  • Bake the potatoes for 10 minutes.
  • While the potatoes are baking, generously season the pork with the pepper, the salt, the remaining garlic powder, the Italian blend, the paprika, and the ranch seasoning.
  • Add the pork chops to the pan with the potatoes, arranging them in the center third of the pan.
  • Bake for 10 minutes.
  • While the pork and potatoes bake, in a bowl, toss the broccoli with the remaining oil and season with the salt and the pepper.
  • Arrange the coated broccoli on the remaining third of the baking sheet.
  • Bake until the internal temperature of the pork reads 145 degrees F and the broccoli and potatoes are easily pierced with a fork, about 10-15 minutes.
  • Allow the pork to rest for 3-5 minutes.
  • Sprinkle with the cheese and serve.
