Ingredients
- 1 1/2 cups chicken cooked and shredded
- 1/2 cup mozzarella cheese shredded
- 4 ounces cream cheese softened
- 2 tablespoons ranch dressing
- 1/4 cup Buffalo wing sauce plus more to taste
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons blue cheese crumbled
- 2 tablespoons chives chopped
- 2 (6-ounce) cans refrigerated biscuit dough
- 1/4 cup unsalted butter melted
- 2 tablespoons Italian parsley chopped
- 1 teaspoon garlic grated
- 1 tablespoon parmesan grated
Directions
- Preheat the oven to 375 degrees F.
- Grease a cast-iron skillet.
- In a medium bowl, mix the chicken, the mozzarella, the cream cheese, the ranch dressing, 1/4 cup of the Buffalo sauce, the salt, the pepper, the blue cheese, and the chives until the chicken is well-coated. Set the chicken mixture aside.
- Roll out each piece of the biscuit dough into 4-inch rounds.
- Add 1 1/2 tablespoons of the chicken mixture to each of the biscuits. Add a drizzle of the extra Buffalo sauce to each.
- Wrap the dough around the filling, pinching the edges to seal them and forming them into a ball. Repeat this process for all of the biscuits.
- Place the biscuit balls seam-side down in the greased skillet.
- In a small bowl, whisk the melted butter, the parsley, the garlic, and the parmesan together.
- Brush the biscuit balls with the herb-butter.
- Bake until golden-brown, about 15-20 minutes.
- Serve hot.
