Ingredients

For the pasta:

  • 12 ounces spaghetti
  • 1 tablespoon extra-virgin olive oil
  • 3 cloves garlic minced
  • 3/4 cup heavy cream
  • 3/4 cup low-sodium chicken broth
  • 3/4 cup Italian cheese blend shredded
  • kosher salt to taste
  • freshly ground black pepper to taste

Optional, for garnish:

  • 2 tablespoons chives freshly chopped
  • freshly ground black pepper to taste
  • parmesan cheese to taste, shredded or grated

Directions

  • In a large pot of salted, boiling water, add the spaghetti and cook it to al dente, according to the package directions.
  • Reserve 1 cup of the pasta water and drain the remainder.
  • In a large skillet over medium heat, add the olive oil.
  • Add the garlic to the hot oil and cook until fragrant, about 1 minute.
  • Add the heavy cream, the chicken broth, and 1/2 cup of the reserved pasta water to the garlic and stir to combine.
  • Add the spaghetti to the sauce mixture and toss to combine. Allow the spaghetti mixture to come to a slight simmer.
  • Transfer the skillet from the heat.
  • Add the Italian cheese blend to the spaghetti mixture and stir and toss to combine, while adding the remaining reserved pasta water, a little at a time, until the cheese has melted and the sauce reaches your desired consistency. You may not need all of the remaining reserved pasta water.
  • Taste the spaghetti mixture for seasoning and add the salt and the freshly ground black pepper, as needed.
  • Serve garnished with the chives, the black pepper, and the parmesan cheese.
