Ingredients
For the pasta:
- 12 ounces spaghetti
- 1 tablespoon extra-virgin olive oil
- 3 cloves garlic minced
- 3/4 cup heavy cream
- 3/4 cup low-sodium chicken broth
- 3/4 cup Italian cheese blend shredded
- kosher salt to taste
- freshly ground black pepper to taste
Optional, for garnish:
- 2 tablespoons chives freshly chopped
- freshly ground black pepper to taste
- parmesan cheese to taste, shredded or grated
Directions
- In a large pot of salted, boiling water, add the spaghetti and cook it to al dente, according to the package directions.
- Reserve 1 cup of the pasta water and drain the remainder.
- In a large skillet over medium heat, add the olive oil.
- Add the garlic to the hot oil and cook until fragrant, about 1 minute.
- Add the heavy cream, the chicken broth, and 1/2 cup of the reserved pasta water to the garlic and stir to combine.
- Add the spaghetti to the sauce mixture and toss to combine. Allow the spaghetti mixture to come to a slight simmer.
- Transfer the skillet from the heat.
- Add the Italian cheese blend to the spaghetti mixture and stir and toss to combine, while adding the remaining reserved pasta water, a little at a time, until the cheese has melted and the sauce reaches your desired consistency. You may not need all of the remaining reserved pasta water.
- Taste the spaghetti mixture for seasoning and add the salt and the freshly ground black pepper, as needed.
- Serve garnished with the chives, the black pepper, and the parmesan cheese.
