3-Cheese Spaghetti is a delicious and simple way to get amazing cheesy flavor in a real hurry! It doesn't even make you work to acquire all the cheeses needed for the melty, sharp, creamy sauce — a package of Italian cheese blend will do that job for you! The pasta is tender, the sauce is rich, and the speed and flavor cannot be overstated! A simple lunch or a classic dinnertime staple, 3-Cheese Spaghetti is a 5-star experience!

Ingredients

For the pasta:

12 ounces spaghetti
1 tablespoon extra-virgin olive oil
3 cloves garlic minced
3/4 cup heavy cream
3/4 cup low-sodium chicken broth
3/4 cup Italian cheese blend shredded
kosher salt to taste
freshly ground black pepper to taste

Optional, for garnish:

2 tablespoons chives freshly chopped
freshly ground black pepper to taste
parmesan cheese to taste, shredded or grated

Directions

In a large pot of salted, boiling water, add the spaghetti and cook it to al dente, according to the package directions.
Reserve 1 cup of the pasta water and drain the remainder.
In a large skillet over medium heat, add the olive oil.
Add the garlic to the hot oil and cook until fragrant, about 1 minute.
Add the heavy cream, the chicken broth, and 1/2 cup of the reserved pasta water to the garlic and stir to combine.
Add the spaghetti to the sauce mixture and toss to combine. Allow the spaghetti mixture to come to a slight simmer.
Transfer the skillet from the heat.
Add the Italian cheese blend to the spaghetti mixture and stir and toss to combine, while adding the remaining reserved pasta water, a little at a time, until the cheese has melted and the sauce reaches your desired consistency. You may not need all of the remaining reserved pasta water.
Taste the spaghetti mixture for seasoning and add the salt and the freshly ground black pepper, as needed.
Serve garnished with the chives, the black pepper, and the parmesan cheese.
