Ingredients
For the apple cake:
- butter to taste, for greasing the pan
- 1 1/2 cups brown sugar
- 1/3 cup oil
- 1 egg
- 1 cup buttermilk
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 cups flour
- 2 1/2 cups Honeycrisp apples chopped
For the cinnamon-sugar topping:
- 1/2 cup granulated sugar
- 1 teaspoon cinnamon
- 1 tablespoon butter melted
- vanilla ice cream optional, to taste, for serving
Directions
- Preheat the oven to 325 degrees F.
- Using the extra butter, grease a 9x13-inch baking pan.
- In a large mixing bowl, add the brown sugar and the oil and stir until just combined.
- Add the egg to the brown sugar-oil mixture and stir until just combined.
- Add the buttermilk and the vanilla and stir until just combined.
- Add the baking soda, the salt, and the flour to the mixing bowl and stir until just combined.
- Add the chopped apples and fold to combine.
- Transfer the batter to the prepared pan, spreading it out evenly.
- In a bowl, add the granulated sugar, the cinnamon, and the remaining 1 tablespoon of the melted butter and stir to combine.
- Sprinkle and spread the cinnamon-sugar mixture over the batter in the baking pan.
- Bake until a toothpick inserted into the center comes out clean, about 45 minutes.
- Serve warm and topped with the ice cream.
