Ingredients

For the apple cake:

  • butter to taste, for greasing the pan
  • 1 1/2 cups brown sugar
  • 1/3 cup oil
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 cups flour
  • 2 1/2 cups Honeycrisp apples chopped

For the cinnamon-sugar topping:

  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon butter melted
  • vanilla ice cream optional, to taste, for serving

Directions

  • Preheat the oven to 325 degrees F.
  • Using the extra butter, grease a 9x13-inch baking pan.
  • In a large mixing bowl, add the brown sugar and the oil and stir until just combined.
  • Add the egg to the brown sugar-oil mixture and stir until just combined.
  • Add the buttermilk and the vanilla and stir until just combined.
  • Add the baking soda, the salt, and the flour to the mixing bowl and stir until just combined.
  • Add the chopped apples and fold to combine.
  • Transfer the batter to the prepared pan, spreading it out evenly.
  • In a bowl, add the granulated sugar, the cinnamon, and the remaining 1 tablespoon of the melted butter and stir to combine.
  • Sprinkle and spread the cinnamon-sugar mixture over the batter in the baking pan.
  • Bake until a toothpick inserted into the center comes out clean, about 45 minutes.
  • Serve warm and topped with the ice cream.
