Ingredients

  • 1 small yellow onion finely diced
  • 1/2 cup red bell pepper sliced
  • 1/2 cup green bell pepper sliced
  • 1 cup mushrooms chopped
  • 1 cup ham fully cooked and diced
  • 1 cup cheddar cheese shredded
  • 8 eggs
  • 1/2 cup half-and-half
  • salt to taste
  • freshly ground pepper to taste
  • fresh parsley chopped, for garnish

Directions

  • Preheat the oven to 400 degrees F.
  • Grease a 7×11-inch or 9x9-inch baking dish with cooking spray.
  • Add the diced onion, the peppers, the mushrooms, and the diced ham to the baking dish, stirring to combine.
  • Top the mixture with the shredded cheddar cheese.
  • In a large mixing bowl, combine the eggs, the half-and-half, the salt, and the pepper, whisking until well blended.
  • Pour the egg mixture over the mixture in the baking dish.
  • Bake until the eggs are set and the top is a light golden brown, about 23-25 minutes.
  • Serve garnished with the parsley.
