Ingredients
- 1 small yellow onion finely diced
- 1/2 cup red bell pepper sliced
- 1/2 cup green bell pepper sliced
- 1 cup mushrooms chopped
- 1 cup ham fully cooked and diced
- 1 cup cheddar cheese shredded
- 8 eggs
- 1/2 cup half-and-half
- salt to taste
- freshly ground pepper to taste
- fresh parsley chopped, for garnish
Directions
- Preheat the oven to 400 degrees F.
- Grease a 7×11-inch or 9x9-inch baking dish with cooking spray.
- Add the diced onion, the peppers, the mushrooms, and the diced ham to the baking dish, stirring to combine.
- Top the mixture with the shredded cheddar cheese.
- In a large mixing bowl, combine the eggs, the half-and-half, the salt, and the pepper, whisking until well blended.
- Pour the egg mixture over the mixture in the baking dish.
- Bake until the eggs are set and the top is a light golden brown, about 23-25 minutes.
- Serve garnished with the parsley.
