Ingredients

  • 2 cups water
  • 3 tablespoons butter
  • 1 (4-ounce) package roasted garlic mashed potato mix
  • 3/4 cup sour cream
  • 1 1/2 cups cheddar cheese shredded, divided
  • 3 cups rotisserie chicken chopped
  • 1 (12-ounce) bottle barbecue sauce of your choice
  • 1/2 cup green onions chopped, divided
  • 6 slices bacon crisply, cooked and crumbled

Directions

  • Preheat the oven to 350 degrees F.
  • Grease a 2-quart baking dish with cooking spray.
  • Bring the water and the butter to a boil in a large saucepan.
  • Remove the saucepan from the heat.
  • Stir in the mashed potato mix.
  • Add the sour cream and 1 cup of the cheese, stirring until fully incorporated.
  • Spoon the mashed potato mixture into the prepared baking dish.
  • Combine the chicken, barbecue sauce, and 1/4 cup of the green onions in a large mixing bowl.
  • Spoon the chicken mixture over the potatoes.
  • Top the casserole with the bacon and the remaining cheese.
  • Place the dish in the oven and bake until the cheese is melted and the edges are bubbling, about 20-25 minutes.
  • Garnish with the remaining green onions and serve hot.
