Ingredients
- 2 cups water
- 3 tablespoons butter
- 1 (4-ounce) package roasted garlic mashed potato mix
- 3/4 cup sour cream
- 1 1/2 cups cheddar cheese shredded, divided
- 3 cups rotisserie chicken chopped
- 1 (12-ounce) bottle barbecue sauce of your choice
- 1/2 cup green onions chopped, divided
- 6 slices bacon crisply, cooked and crumbled
Directions
- Preheat the oven to 350 degrees F.
- Grease a 2-quart baking dish with cooking spray.
- Bring the water and the butter to a boil in a large saucepan.
- Remove the saucepan from the heat.
- Stir in the mashed potato mix.
- Add the sour cream and 1 cup of the cheese, stirring until fully incorporated.
- Spoon the mashed potato mixture into the prepared baking dish.
- Combine the chicken, barbecue sauce, and 1/4 cup of the green onions in a large mixing bowl.
- Spoon the chicken mixture over the potatoes.
- Top the casserole with the bacon and the remaining cheese.
- Place the dish in the oven and bake until the cheese is melted and the edges are bubbling, about 20-25 minutes.
- Garnish with the remaining green onions and serve hot.
