Ingredients
- 2 tablespoons vegetable oil
- 1 1/2 pounds ground beef
- 3 tablespoons chili powder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt plus more, to taste
- ground black pepper to taste
- 1 medium onion finely diced
- 4 cloves garlic minced
- 1 (15-ounce) can pinto beans strained and rinsed
- 2 cups jarred tomato salsa
- 1/2 cup water
- 6 cups yellow corn tortilla chips
- 3 cups cheddar and Monterey-Jack cheese blend shredded
- 1 cup sour cream stirred well, for serving
- 1 cup iceberg lettuce shredded, for serving
- 2 plum tomatoes diced, for serving
- 1/2 avocado diced, for serving
- 1/4 cup pickled jalapeños chopped, for serving
Directions
- Preheat the oven to 375 degrees F.
- Grease a 9x13-inch casserole dish.
- In a large skillet over high heat, add the oil and heat until it is shimmering.
- Add the beef, the chili powder, the cumin, the oregano, 1 teaspoon of the salt, and the pepper to the oil and cook, while crumbling the meat, until it is no longer pink, about 5 minutes.
- Add the onions and the garlic to the beef mixture and cook until the onions are soft, about 5 minutes.
- Add the beans, the salsa, and the water to the beef mixture, bring it to a simmer, and cook until the sauce thickens and coats the meat, about 5 minutes.
- Season the beef mixture with the salt and the pepper.
- Place 1/2 of the tortilla chips in the bottom of the prepared casserole dish.
- Spread 1/2 of the meat mixture over the top of the chip layer.
- Sprinkle 1/2 of the cheese over the beef mixture layer.
- Repeat the layers once, starting with the chips and ending with the cheese.
- Bake the casserole, uncovered, until the cheese melts and the casserole is hot, about 20 minutes.
- Serve the casserole with the sour cream, the lettuce, the tomatoes, the avocado, and the pickled jalapeños.
