  • 3 tablespoons chili powder
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt plus more, to taste
  • ground black pepper to taste
  • 1 medium onion finely diced
  • 4 cloves garlic minced
  • 1 (15-ounce) can pinto beans strained and rinsed
  • 2 cups jarred tomato salsa
  • 1/2 cup water
  • 6 cups yellow corn tortilla chips
  • 3 cups cheddar and Monterey-Jack cheese blend shredded
  • 1 cup sour cream stirred well, for serving
  • 1 cup iceberg lettuce shredded, for serving
  • 2 plum tomatoes diced, for serving
  • 1/2 avocado diced, for serving
  • 1/4 cup pickled jalapeños chopped, for serving

Directions

  • Preheat the oven to 375 degrees F.
  • Grease a 9x13-inch casserole dish.
  • In a large skillet over high heat, add the oil and heat until it is shimmering.
  • Add the beef, the chili powder, the cumin, the oregano, 1 teaspoon of the salt, and the pepper to the oil and cook, while crumbling the meat, until it is no longer pink, about 5 minutes.
  • Add the onions and the garlic to the beef mixture and cook until the onions are soft, about 5 minutes.
  • Add the beans, the salsa, and the water to the beef mixture, bring it to a simmer, and cook until the sauce thickens and coats the meat, about 5 minutes.
  • Season the beef mixture with the salt and the pepper.
  • Place 1/2 of the tortilla chips in the bottom of the prepared casserole dish.
  • Spread 1/2 of the meat mixture over the top of the chip layer.
  • Sprinkle 1/2 of the cheese over the beef mixture layer.
  • Repeat the layers once, starting with the chips and ending with the cheese.
  • Bake the casserole, uncovered, until the cheese melts and the casserole is hot, about 20 minutes.
  • Serve the casserole with the sour cream, the lettuce, the tomatoes, the avocado, and the pickled jalapeños.
