Ingredients

  • 3/4 cup canned black-eyed peas rinsed and drained
  • 2 cups tomatoes chopped
  • 1 cup corn rinsed and drained
  • 1 tablespoon jalapeno chile optional, minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • cilantro optional, to taste

Directions
