Ingredients

  • 3/4 cup butter softened
  • 1 cup sugar
  • 1 large egg room temperature
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 1/3 cups sweetened shredded coconut
  • 1/2 cup walnuts chopped
  • 1 (10-12-ounce) jar apricot preserves

Directions

  • Preheat the oven to 350 degrees F.
  • Coat a 9x13-inch baking pan with baking spray.
  • In a large mixing bowl, add the butter and the sugar and using an electric handheld mixer, beat until it is combined, light, and fluffy, about 5-7 minutes.
  • Add the egg and the vanilla to the butter mixture and beat to combine.
  • In a small bowl, add the flour and the baking powder and whisk to combine.
  • Gradually add the flour mixture to the butter mixture, mixing well, until just combined into a dough.
  • Add the coconut and the walnuts to the dough and fold to combine.
  • In the bottom of the prepared baking pan, press 2/3 of the dough, making sure to spread it out across the entire bottom.
  • Add the apricot preserves to the dough layer in the baking pan and spread it out evenly.
  • Evenly crumble the remaining dough over the top of the preserve layer.
  • Bake until the crumble on top is golden-brown, about 30-35 minutes.
  • Transfer the baking pan to a wire rack to cool completely.
  • Cut into bars and serve.
