Ingredients
- 3/4 cup butter softened
- 1 cup sugar
- 1 large egg room temperature
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1 1/3 cups sweetened shredded coconut
- 1/2 cup walnuts chopped
- 1 (10-12-ounce) jar apricot preserves
Directions
- Preheat the oven to 350 degrees F.
- Coat a 9x13-inch baking pan with baking spray.
- In a large mixing bowl, add the butter and the sugar and using an electric handheld mixer, beat until it is combined, light, and fluffy, about 5-7 minutes.
- Add the egg and the vanilla to the butter mixture and beat to combine.
- In a small bowl, add the flour and the baking powder and whisk to combine.
- Gradually add the flour mixture to the butter mixture, mixing well, until just combined into a dough.
- Add the coconut and the walnuts to the dough and fold to combine.
- In the bottom of the prepared baking pan, press 2/3 of the dough, making sure to spread it out across the entire bottom.
- Add the apricot preserves to the dough layer in the baking pan and spread it out evenly.
- Evenly crumble the remaining dough over the top of the preserve layer.
- Bake until the crumble on top is golden-brown, about 30-35 minutes.
- Transfer the baking pan to a wire rack to cool completely.
- Cut into bars and serve.
