Ingredients

3/4 cup butter softened
1 cup sugar
1 large egg room temperature
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon baking powder
1 1/3 cups sweetened shredded coconut
1/2 cup walnuts chopped
1 (10-12-ounce) jar apricot preserves

Directions

Preheat the oven to 350 degrees F.
Coat a 9x13-inch baking pan with baking spray.
In a large mixing bowl, add the butter and the sugar and using an electric handheld mixer, beat until it is combined, light, and fluffy, about 5-7 minutes.
Add the egg and the vanilla to the butter mixture and beat to combine.
In a small bowl, add the flour and the baking powder and whisk to combine.
Gradually add the flour mixture to the butter mixture, mixing well, until just combined into a dough.
Add the coconut and the walnuts to the dough and fold to combine.
In the bottom of the prepared baking pan, press 2/3 of the dough, making sure to spread it out across the entire bottom.
Add the apricot preserves to the dough layer in the baking pan and spread it out evenly.
Evenly crumble the remaining dough over the top of the preserve layer.
Bake until the crumble on top is golden-brown, about 30-35 minutes.
Transfer the baking pan to a wire rack to cool completely.
Cut into bars and serve.
