Ingredients
- 3 tablespoons butter plus more, to taste, for greasing the baking dish
- 1 small yellow onion diced
- 3 tablespoons all-purpose flour
- 1 cup half-and-half
- 1/2 cup whole milk
- salt to taste
- ground black pepper to taste
- 1 teaspoon garlic powder
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- 4 large russet potatoes peeled and thinly sliced
- 1 1/2 cups hickory-smoked ham chopped
- 1/2 cup cheddar cheese grated
- 1/2 cup Monterey Jack cheese grated
- scallions to taste, sliced, for garnish
Directions
- Preheat the oven to 375 degrees F.
- Grease a baking dish using the extra butter.
- Melt the remaining butter in a large skillet over medium heat.
- Add the onions to the butter and cook, while stirring, until they start to soften, about 3-4 minutes.
- Sprinkle the flour over the onion and whisk together.
- Cook the onion mixture until golden-brown, about 2 minutes.
- Stir the half-and-half and the milk into the onion mixture and whisk until thickened, about 3-4 minutes.
- Transfer the mixture from the heat.
- Season the sauce with the salt and the pepper.
- Add the garlic powder, the Worcestershire sauce, the onion powder, and the paprika.
- Place 1/2 of the sliced potatoes into the prepared baking dish.
- Top the potato layer with 1/2 of the ham, 1/2 of the cheddar cheese, and 1/2 of the Monterey Jack cheese, in that order.
- Pour 1/2 of the sauce over the layers.
- Repeat the layers once, starting with the potatoes and ending with the sauce.
- Cover the dish with aluminum foil and bake for 40 minutes.
- Discard the foil and bake until the cheese is golden on top and the sauce is bubbling, about 20-30 minutes.
- Garnish with the scallions and serve.
