Ingredients

  • 3 tablespoons butter plus more, to taste, for greasing the baking dish
  • 1 small yellow onion diced
  • 3 tablespoons all-purpose flour
  • 1 cup half-and-half
  • 1/2 cup whole milk
  • salt to taste
  • ground black pepper to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 4 large russet potatoes peeled and thinly sliced
  • 1 1/2 cups hickory-smoked ham chopped
  • 1/2 cup cheddar cheese grated
  • 1/2 cup Monterey Jack cheese grated
  • scallions to taste, sliced, for garnish

Directions

  • Preheat the oven to 375 degrees F.
  • Grease a baking dish using the extra butter.
  • Melt the remaining butter in a large skillet over medium heat.
  • Add the onions to the butter and cook, while stirring, until they start to soften, about 3-4 minutes.
  • Sprinkle the flour over the onion and whisk together.
  • Cook the onion mixture until golden-brown, about 2 minutes.
  • Stir the half-and-half and the milk into the onion mixture and whisk until thickened, about 3-4 minutes.
  • Transfer the mixture from the heat.
  • Season the sauce with the salt and the pepper.
  • Add the garlic powder, the Worcestershire sauce, the onion powder, and the paprika.
  • Place 1/2 of the sliced potatoes into the prepared baking dish.
  • Top the potato layer with 1/2 of the ham, 1/2 of the cheddar cheese, and 1/2 of the Monterey Jack cheese, in that order.
  • Pour 1/2 of the sauce over the layers.
  • Repeat the layers once, starting with the potatoes and ending with the sauce.
  • Cover the dish with aluminum foil and bake for 40 minutes.
  • Discard the foil and bake until the cheese is golden on top and the sauce is bubbling, about 20-30 minutes.
  • Garnish with the scallions and serve.
